In a flat-burr grinder, the two burrs should sit perfectly parallel and centred on the same axis, so every particle is cut to the same size as it passes between them. If one burr is tilted or off-centre, even by a fraction of a millimetre, the gap is wider on one side than the other. The grinder then produces a mix of very fine particles and coarse boulders, and the espresso extracts unevenly: bitter and sour at the same time, with shots that are hard to dial in.
To check alignment, our technician first cleans the burr carriers and seats, then runs a marker test: the cutting faces are coloured with a marker, the burrs are brought together briefly, and the pattern of wear shows where they touch. On grinders that allow it, a dial indicator measures how much the carrier wobbles as it rotates.
Correcting it usually means removing old coffee and burrs of metal from the seats, re-seating the burr carriers and adding thin shims until the burrs meet evenly all the way round, followed by a fresh calibration of the zero point. Cafés often ask for a grinder alignment service after every burr change, because new burrs seated on a worn or dirty carrier can sit slightly crooked and undo the benefit of a fresh set.

A home grinder might grind a few doses a day, so wear builds slowly. Most benefit from a service every 6 to 12 months: a strip-down clean, an alignment and calibration check, and a look at the burrs. Oily dark roasts and Dubai's dust shorten that interval, and a grinder that has been dropped or moved house is worth checking straight away.
A café grinder can grind more in a week than a home grinder does in a year. Burr life on commercial grinders is measured by the weight of coffee ground, so check your grinder maker's guidance for your model and burr set, and track kilos rather than months. Between burr changes, regular cleaning and an alignment check keep extraction consistent across the day.
There is no single answer: it depends on the burr size, whether they are flat or conical, the steel and any coating, how much coffee goes through them and how light or dark the roast is. Large commercial burrs last far longer than small home burrs, and coated burrs generally outlast plain steel.
The practical signs are more reliable than the calendar: you have to grind steadily finer to reach the same shot time, grinding takes longer, the grounds contain more dust and boulders, and flavour turns flat. If you notice those, we measure the burrs and tell you honestly whether a replacement or just an alignment will fix it.
